Was defended the first doctoral thesis held at the postgraduate program in food science and technology (PPGCTA), the Institute of technology (ITEC) of UFPA, in the afternoon of Thursday, 24. The defense was made in Ceamazon and was attended by professors, the Dean of research and graduate studies, Emmanuel Tourinho, as friends and family of PhD student.
The thesis "Prospecting in Amazonian fishes bacterial and their resistance to sanificantes" was defended by Evelyn Ivana Trinity Dallas, Food engineer and master in food science and technology by the same graduate program. For the doctoral candidate, the job search alert about the proper treatment of the fish consumed in the region. "This work is of great importance to us, in the Amazon region, because the fish consumption in the region is large and, often, he's not well sanitized and stored," says Evelyn.
The objective of this work was to identify the bacterial flora present in some of the fish consumed in the region, such as the golden calf, the piramutaba and Peacock bass; as these bacteria can act on deterioration of the fish and what their resistance to the sanitizers agents, in the case of job, Peracetic acid (C2H4O3) and sodium hypochlorite (NaClO), the active ingredient of bleach.
One of the results observed was that the Peracetic acid was able to reduce the levels of harmful bacteria in some fish, and is considered the best way to higienizá it. Also it was possible to observe that the combination of Peracetic acid cleaning and conditioning in refrigeration were able to prevent the harmful bacteria if proliferassem by fish.
Strengthening food-research for the PPGCTA and he studied labor Advisor, Antônio Manoel da Cruz Rodrigues, the thesis comes to supply a need for more scientific research on the quality of the food provided in the Amazon. "This defense has great expectation, according to the grace period that we have of researchers in food in the Amazon and scientific production, in addition to the rich diversity of natural food resources that we have," says the professor.
To the program coordinator, Lucia of Fatima Haidara Lourenço, the thesis means the result of a strengthening of research in food, which is being done in PPGCTA. "Our graduate program is new and is still growing, still, we have been able to leverage it and disseminate their work in the scientific community, and this is another reason of great satisfaction for the program in its consolidation," says the teacher.
PPGCTA-the postgraduate program in food science and technology was founded in 2003, with the goal of providing the advancement of scientific research in food, as well as empower professionals, teachers and doctors, to act in that area in the Amazon. The first group of master's degree began in 2004. The doctorate was approved in 2010, with the first group starting in 2011. Evelyn's thesis is the first defended the program. The program still has over 50 students enrolled in master's and doctoral degrees.
To Evelyn, the expectation is that your work can have continuity and consumers of fish from Pará can enjoy foods with more peace of mind and security. "We note that it is necessary to improve the sanitisation of the fish consumed in the city and we hope that the solutions can be used so that the fish can be consumed properly", wait for the PhD student.
